This takes max 15 mins to make and within 20 mins you are eating it 2 tabs olive oil 1 onion finely diced 14 oz can cannellini beans 1 3/4 pt (1 litre) good veg stock 100g ground almonds Heat the oil in large saucepan and cook onion till soft Add beans and stock and cook for 10 mins Stir in almonds and cook for 5 mins Blend in a processor until smooth

Once you have eaten it you will go on and on making it
I did think when I got the recipe - it was one we had to make at night school - that I would hate it
But of course as part of the class course I had to make it - it just goes to show you dont know what yu like until you try it

Yum Jenny - I was going to ask if you would post the recipe. The Spanish do love their almonds and having seen fields and fields of them in March I know why they use them so much.

I didnt know that Jasmine - in fact I didnt think as to where they came from I googled them and found this info Almonds are generally collected automatically by almond tree shakers. They are collected manually too in some regions depending on the plantation extension and accessibility. A green square cloth is set then under the tree and then its shaked using long canes until the fruits fall over it and manually collected.

There is one round the corner from me!! I couldnt believe it when I was walking on almonds when I took the dog for a walk I think it is at the end of the summer maybe Sept or Oct, I would have thought it isnt warm enough here but they were definately almonds! my Son has a walnut tree in his house in France, although it wasnt a very good year for them last year ! sorry that was a change of NUT

It was really nice - hubby scrapped the bowl clean! Thanks Jennywren. I thought it would be a great soup for a summer dinner party, it was light and refreshing. I had a little left and that is for lunch today
