150g Onions 75g Raw Cashew Nuts 100g dried Apricots 150g mushrooms 2 cloves of garlic 2tbsp water 1 egg beaten 1 slice of thick bread crumbled salt and pepper to tast Method. Put nuts in pan with a little oil and fry until golden, watch carefully keep turning, turn out on to a chopping board roughly chop, finel chop onions and garlic and fry gently more to sweat than fry, chop the mushrooms finely add and stir well cook for 10mins chop or snip apricots into small pieces add to pan with water cook gently until soft put in basin and add breadcrumbs and egg salt and pepper to taste leave to cool before slitting chicken breasts and stuffing use cocktail sticks to keep tidy and cook. also good with pork fillet and lamb. if you have any left over put in small basin dot with buttter and put in oven for 15 to 20 mins----you can also use Cranberries and Pecan instead of Apricot and Cashew. Ive never cooked it yet just eaten it at Sister in Laws and it is delicious.

BUM I forgot to get the apricots and cashew nuts from asda, I'll have to trudge up to the co-op before friday now. Trying to economize by not leaving the house

Yummy! I'm going to give it go too - for some strange reason we do have all the stuffing ingredients here which is really rare. Not sure what to buy to stuff it into yet though.

Sounds delicious, I have just one question. How many chicken breasts Maggy? As many as youlike Sweety; I dont know how they would freeze but my Sister in law had 8 of us for lunch!! Ive yet to do it Ill probably half the amounts.

Glad you enjoyed it B.M. it certainly makes chicken more tasty. ;D It did - I thought that hubby wouldn't eat his - the chicken breast was huge (must have been an odd shaped free range chicken!) and he doesn't like too much since he has been on his fitness campaign, but he cleared his plate.
