Tin tomatoes - chopped pack fresh plum tomatoes - skinned and chopped 1 onion - chopped 1 clove of garlic - chopped finely dried oregano olive oil salt and pepper about 1 dstp sugar 1 tblsp tomato puree 1 large or 2 small aubergines - cut into half inch slices and lightly salted for about an hour - then rinsed and dried on kitchen paper Shake the slices in a bag with some seasoned flour and then fry till golden brown.Drain well on kitchen paper 1 pot of total greek yoghurt - the normal size 2 eggs 3 -4 oz cheddar cheese - grated about 4oz small spirally pasta - cooked Lightly grease an ovenproof dish- I use a medium sized oval one Fry the chopped onion and garlic in some olive oil until cooked but not brown Add the tomatoes,oregano,puree,sugar and salt and pepper Cook for about 15 - 20 mins Stir in the cooked pasta and put into the ovenproof dish Arrange the aubergine slices on top. Mix together the yoghurt,cheese and eggs - season then spread over the augergine slices Bake on the middle shelf Gas No 4 for about 40 minutes until golden brown. I invented this recipe so if you try it and don't like it - sorry

Thanks elsie, copied and printed off. How many would that serve approx. please? Sounds delicious. I will have to put some bacon or meat in for my hubby otherwise he will eat it and then ask where the meat was! Love the name of the dish ;D

I have one of those too Bogmyrtle ;D He is good really as we do have 2 or 3 veggie meals each week. It would serve 3 - 4 people - we have some garlic bread with it ;D
