Hi. I'm not sure if this should be in the food section or here but since the poultry folks abound in this section .... Why do some egg shells peel off quickly and cleanly and others seem to be fastened with industrial strength adhesive? Is it a cooking / temperature issue or something within the egg itself? I just boiled some eggs and seems like most of the egg is still attached to the shell. : Thanks. ;D

Nothing wrong with those eggs Lydia - they're only crime is that they're very fresh! The older an egg gets, the easier and more smoothly it comes away from the shell. Don't know if it's an eggsact science but that's what I've learned from somewhere, and it's my own experience too.

I know - I give OH a hard boiled egg as part of his lunch, but when it's an egg from one of our chickens it comes away in chunks - much better use some shop-bought free range eggs, they're still lovely but that bit older to have settled down a bit!

Speaking of age then ... How long can one store eggs before they go bad? I wouldn't want them stripping off their own shells. ;D

We got some yesterday from the supermarket, as my girls aren't doing much atm and we like a cooked breakfast at the weekends. It said on the box to display until 14th Nov and best before 20th Nov - that's ages!

If you want to peel an egg properly, the trick is to very slightly crack the shell before you put it in cold water to cool it, it breaks the vaccuum inside the shell and the shell comes off without damaging the egg

If you want to peel an egg properly, the trick is to very slightly crack the shell before you put it in cold water to cool it, it breaks the vaccuum inside the shell and the shell comes off without damaging the egg I try that, I usally crack my hardboiled eggs and then roll them back and forth across the worktop then peel, I'll see if your way works on the fresher eggs We are down to 1 or 2 eggs a day now, but we did have 3 today, the poorly hen seems much better so maybe thats why.

I didn't know it either until my girls worked for a Show caterer where they were making vast numbers of egg sandwiches every day. A handy little tip they got from an eggspert.........

Interesting ... how to peel the shell off more neatly! ;D I tried to crack it before the cold water and still had some stuck on the shell but it was less. I'll try to roll the shell off too. Thanks for the tips and information.

Thanks for the tips, as it is something that frustrates me totally. How come when you can do eggs of the same age and some peel nicely and some don't? If they are all the same, cooked the same, it shouldn't make a difference whether you crack them first or roll them them, surely? I've put a spanner in the works now, haven't I? ;D
