Red onions very finely chopped 2 plump cloves of garlic 2 teaspoons of brown sugar Glug of Balsamic Vinegar clump of Thyme chopped 1 Bay leaf Slurp of either/or all White wine/Brandy/or Sherry I pt of stock
Very gently fry the onions and garlic until soft (about 30 minutes), add the sugar and balsamic vinegar after about 10 minutes. Then add chopped thyme and a bay leaf, the stock and the alcohol and very gently heat for another 20/30 minutes. Season to taste. Pour into a casserole dish (or individual bowls if preferred) and top with sliced buttered stale french bread and top with the cheese of your choice. Heat through in an oven for a few minutes and then grill quickly until the cheese browns and bubbles. Very nice too!

Thanks 4Ps that sounds just the thing for the winter months I think Ive got everything in but the thyme!! I just cant manage to grow the stuff ! What stock do you use? chicken would be no good would it? it would make it cloudy.

I make my onion soup very similar to yours 4P but I've never put Balsamic Vinegar in it - I'll give that a go I use chicken stock, and I use gruyere or emmenthal cheese which taste wonderful with the slightly sweet onions.
