We made this in 2006 for the first time using Ben Law's recipe - not a good vintage! We hadn't made wine before but when we came to open a bottle last year, there was a very distinct cheesy smell to it and last night we tried another one to see if it was any better, 'fraid not! We intend trying again this spring, can anyone offer any advice please? Many thanks Myrtle

Use a white wine yeast, and make sure you plug that hole in the tree, or the tree will bleed to death. Oh, and collect your sap on St Georges Day.

St Georges Day is when the rising sap is suposed to be at it's strongest - traditionally.

I hope you have better luck the next time you make it, Myrtle. We have demi johns full of our apple wine, it's been there for over a year and we haven't drunk it, which is saying something! We are waiting for it to improve with age, but it just keeps getting darker and more lethal looking, and the taste yeuch. After the first few shudders it's OK.... ;D
Maybe if it's cheesy have some crackers with it? ;D

Or when you put some in the wardrobe to work itself out, it's bubbling a bit and then you realize it's eating a hole through the wardrobe floor!

Hi! When I was a twelve year old kid, 43 years ago, My best friend at the time made Birch pop by some recipe of his and bottled it. It was fantastic from the first to last bottle. Never even thought of wine! Certainly it was good at the time, but I can't put a taste to the memory now, just,...it was good! I'm all ears if someone can whip up a real good batch and share the news, or the drink!!! Manfred
