2 eggs 100g butter 2 tablespoons sugar 4 tablespoons flour rind of hal a lemon (optional) pinch of salt
Seperate the eggs and whisk the whites until fluffy and stiff. In another bowl combine all the other ingredients, including the egg yolks, and mix until smooth (it makes a fairly firm paste and milk can be added if required). Carefully fold in the egg whites and bake in a very hot waffle iron for about 4 minutes.
The waffles may be frozen when cool and re-heated in a toaster.
