Serves 5-6 Pastry: 450g (1lb) self raising flour Pinch salt 225g (8oz) shredded suet Water Filling: 700g (1 1/2 lb) diced pork shoulder 1 large cooking apple - peeled, cored & sliced Chopped sage S&P Butter pudding basin (2 1/2 pt). Sieve flour & salt into bowl, add suet. Mix to a soft (not sticky) dough with just enough cold water. Roll out and use 3/4 to line the basin. Alternate layers of pork & apple in lined basin, seasoning with s&p and sage as you go. Make lid with remaining pastry and fold the top of the lining back over the edge of the lid to help seal. Cover with greaseproof papr and foil. Steam for 4hrs topping up with water as nec. Sounds delicious - I think it would be nice as well with sage & onion stuffing inside!

I have been avoiding this thread as I love the combination of pork and apple and I haven't made a suet pudding for decades.........(not for the first time she wished her OH wasn't a vegetarian). Mmm, that sounds deeelicious...........I wonder if I could do a winter veggie version.....? Maybe with lots of different mushrooms....? It doesn't sound as if it would quite hit the taste buds though does it? A drop of cider inside too maybe...with the pork and apple....? Yum..

Perhaps a treat for yourself and smallest when he is away? Atora do a vegetarian suet now - haven't tried it though so not sure what it is like!
