When is a banana at its most nutritional? Is it when it's green and not so sweet and crunchy? Is it the middle stage where it's sweet, the flesh is soft and there are just a couple of brown spots on the skin or is it when it's gone over to mushy and there are brown spots galore all over the skin? I mused over this when I was breaking one up in its mushy stage into some Weetabix this morning. Anyone know?

My mum loves them, when they are 'black'!!!!!! I saw some in the cupboard once and they were starting to go black and said, aren't you going to eat these banana? They're not ready yet, came the reply!!

Thanks Keith. Yes they do look horrible! She never used to be like that, just in the past 10 years or so. I'll ask Jennifer when she gets home tonight, unless I can get her beforehand. Let her use her food science degree for something!!

Thanks Keith. I had to double check the title of this thread! Tut tut!! Just had a twenty minute chat with Jennifer, mostly about Stephen and what post had come, but asked her the question. The banana skin should go a bright yellow, after the green stage and it's there, she thinks, when it's at it's most nutriotous. So I was 99% right. She then blinded me with science, of which some went in and some didn't, but basically after the green stage, it goes yellow then bright yellow, before it dulls off again to a dull yellow. When the brown/black spots/marks come, the cell walls are breaking down, so G*d know why my mum wants to eat them when they have mostly gone off!! Hope that helps.

I can't eat Bananas, about the only food I could not eat (even if paid to eat it) I can't stand the smell and even as a baby my Mum said I used to heave and wouldn't eat it. One of my children is the same, but the others will only eat if yellow. If they have brown speckles, they go around the roses or in the compost! They used to bring my Mum out in a rash. At least fc if you didn't eat it as a baby you didn't have babygrows and bibs stained rotten with the stuff - I could never get banana stains out of anything if either I spilt some on feeding my babies or they regurgitated it, that was it!

I can't eat them at all.
They make me incredibly sick, my stomach swells goes hard and feels like it's going to blow! I've been told it's the potassium or something.
Capsicum Peppers have the same effect too, so I can't eat them either!
