Stupid here had a Tesco shop delivered today and found I'd ordered 4x 1 KG bags of carrots instead of 4 loose carrots! : Has anybody got any carrot recipes that use a LOT of carrots? Please?

I don't know if I can freeze them as I'm not sure if they've been frozen before - do you know if they do that? Thanks for the jam recipe, I've never seen that before and it looks great! Carrot burgers, mashed carrot, tons of carrot in everything - they'll go. : We'll all be coleslawed out too by the end of this. Carrot curry, just a few extra carrots in the stew - shame we haven't got the guinea pigs and rabbit my daughters want here already.The chickens won't eat them just my luck! ;D

Invite me over, I LOVE RAW CARROTS! Didn't somebody somewhere turn orange because they were addicted to carrots? That was me. It wasn't carrots. I got Orange Willy Syndrome. The doctor told me to stop watching episodes of The Good Life and eating Wotsits at the same time.

I don't know if I can freeze them as I'm not sure if they've been frozen before - do you know if they do that? I very much doubt that they had been frozen Debbie. Just asked Jennifer, while she's slumming it in the hotel in Dublin. They would have been chilled but not frozen, so you can still freeze them now. Just in case you don't know (ignore if you do) to freeze carrots.. a) Peel/scrape them and cut them up. b) Blanch them in water that is already boiling for between 30-60 seconds. c) Plunge them straight into freezing cold water to cool them down quickly. d) Spread them out onto a lined baking tray and place it all into the freezer. e) Once frozen, remove tray and bag up carrots. f) Use with 4 to 6 weeks. Like I said, if you know this already, forget I mentioned it. Just had a great conversation with Jennifer about this, made her laugh!! ;D Well you didn't think I knew this, did you?? Sleepy, that Orange Willy Syndrome, must have been quite embarrassing!! ;D Did you really have to give up The Good Life and Wotsits or could you still do that, separately??

Myrtle - Thanks Keith and I didn't know how to freeze them, never having had such a quantity before! ;D Thanks to Jennifer too. OH and I think that we'll probably use them all but in case we all start turning colour or start feeling murderous at the very sight of a carrot I'll bear the freezing technique in mind! Tonight it's going to be carrot burgers with some potato, peas, kidney beans and spices in them etc. Guaranteed 90% carrot.

It'll cost less holding on to them than taking them back to Tesco and the inconvenience. I don't think it's going to be that bad really, finding new and ingenious ways to keep them interesting. ;D And everybody interested.

They're a couple of days past their use by date now so I'm cooking the whole lot today and making burgers which I'm going to freeze. My family made the mistake of saying they liked the ones I made the other day so now they'll have plenty. ;D
