I tried a new way to cook spuds this evening, found the recipe in the Organic Gardening magazine, which I thought was quite tasty so I thought I'd share it with you: 500g potatoes 25g butter 50g very strong cheese grated 1tsp paprika 1 tsp chives 1 egg salt and pepper sesame seeds Grease a muffin tin very well with butter including the spaces in between. Peel, chop and boil the potatoes. When well cooked mash thoroughly and add the butter, cheese, paprika and chives. Mix with a fork. Beat the egg separately and add to the mash. Drop spoonfuls of the mixture into the muffin tin and sprinkle with sesame seeds. Bake at 220C/425F/gas mark 7 for 15 - 20 minutes or when the cakes are risen and golden. I thought they were very good. I expect there are endless ways to vary this recipe too

One of my customers just gave me a bagful of desirae potatoes, so it looks like Cheese and Sesame Potato Cakes are on the menu this week! Thanks 4P! ;D

Ill have to have a go at that one 4Ps ;D I always used to add an egg when mashing spuds when my kids were at home! I didnt realize it would rise if put in the oven.
