2 cups of grated courgettes (with the skin on) 3 cups plain flour 2 cups sugar 3 eggs 1 cup vegetable oil 1 tsp salt 1 tsp baking soda 1 tsp baking powder
Just mix it all together and divide into 2 well buttered bread tins. Bake at 180 degrees for 50 - 60 minutes or until a knife comes out clean. It's better to bake slowly at a lower temperature as it's quite a sloppy consistency. Luffley with butter even when cold....

And while I think of it:
Banana Cake (sorry, not metric, me)
8oz SR Flour 40z Soft brown sugar 40z marg or butter 3/4 very ripe bananas 2 eggs Cinnemon & 1 tbsp of brown sugar
Cream margarine and sugar, mash bananas and add to mixture. Add eggs and then gradually stir in flour. Put into well buttered bread tin and sprinkle the top with cinnemon and sugar. Cook for at least an hour in hot oven (180 degrees or thereabouts) until firm to touch and topping is nicely browned.
This recipe works as well with thinly sliced apples and is really nice with a mixture of fruit. Good way of using less than perfect or overripe fruits.

Brilliant! Thanks 4P - I am so going to have a go at both of them. I think everyone here'll love it - I could even get my picky son to try some, call it just 'cake' and keep quiet about the demon ingredients i.e. the bananas and courgettes!

my courgette cake is in the oven as we speak...dunno if it'll turn out (no pun intended) as I used butter instead of oil and I only have one big loaf tin....

I will give the Courgette cake a go. I have so many I can't keep up, even giving quite a few away. My son has just seen this and said he fancies it so will give it a go.

I made the Courgette Cake today. It's unusual but I like it ;D My son has had some, my daughter didn't try it when she knew it had Courgettes in it.
