3 large eggs 4oz plain flour 1 heaped teaspoon baking powder 5floz milk pinch salt if you want sweeter pancakes add 1 rounded dessert spoon of sugar
Separate the eggs, putting the whites into one large bowl and the yolks into another. Add the flour, baking powder and milk (and suger if using) to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Put the yolk batter into the whites and fold together gently.
Cook as preferred - in a frying pan or griddle, spooning the mixture into the size you want, and turning them over to cook the other side. Serve with maple syrup, chocolate spread, lemon and sugar - whatever you fancy!
