The other night I made macaronni cheese, normally I just use cheddar but this time I added some brie, the sauce turned out really creamy. Now I dont use measures so it may have been that it was just a different quantity of corn flower, I used slightly more than I normally would have, but it might be have been the added brie. If you like cheese sauce it might be worth trying, of course this may be old hat to cooks but I aint a "cook".

Neither am I really, Im always surprised when my food tastes nice! Ill try the Brie thing next time I make cheese sauce. ;D

Oooh brie sounds like a nice idea, and I might have to try using cornflour too - I always use plain flour for my cheese sauce.

Mmmm... I use flour but make a roux I use cornflour for the roux.. I didnt know there was any other way to make a "white" sauce My mum taught me to cook, I dont usually use books, and the only thing I was taught at school was cake. I did carpentry instead, as soon as I could. ;D

Like The witch I always use flour for a roux, but like you Sweetleaf I don't really use cookbooks except for ideas and cakes! Cookery at school was pretty basic, especially as I'd already learned masses from mum, and we did things like baked apples, upside down cake and flapjacks. Ours was an all girls school so we didn't have a carpentry option. I wanted to do pottery but for various reasons that was never given to me as an option.

ah I thought I had posted about this cheese sauce somewhere but for the life of me couldnt think where
The witch wow that bake cheese would be a bit too much, rich, for me I think. I had a a lasagne once (pub grub) and the cook had used just brie or something similar to make the sauce and there was a lot of sauce, it was too much for me and from memory I struggled to finish it, I had paid for it so I was blooming well going to eat it besides I had 170 or so miles to ride home and it was in the middle of winter if memory serves me correctly.
